I have loved pancakes since, well, forever it seems. It was always the best thing in the world when my mom would make me special pancakes – snowmen, Mickey Mouse, etc.
Anyways, once I learned about my gluten intolerance, I had to say good-bye to the sweet circles of joy. Then about a year ago I was walking through Target and the most magical thing caught my eye – Bisquick GLUTEN FREE!! I can’t tell you how excited I was. I think I might have jumped up and down right there in the aisle. Well I went through a few boxes, and the pancakes were fantastic. I even made some waffles too. But when Sam and I started to kick our fitness and nutrition in gear, I had to kick the boxes out of my pantry and make room for more nutritious items.
Well, since then, my pancake craving has surfaced. Which lead to experiments in the kitchen – which has lead to what I think is the most amazing pancake recipe ever! The best thing about this recipe is that it is chocked full of protein and slow digesting carbs – score! (Man, I remember a time when those terms would have gone in one ear and out the other. And now, it makes me giddy! Wow how times change).
