Happy Sunday everyone! Or in our household, it is called Football Day!
I was in Las Vegas for work Tuesday thru Friday this past week, which explains why I have been MIA. But, I am back in action after recuperating all day yesterday
In addition to watching football on Sundays, one of my rituals is to prepare lunches for the week ahead. I have found that if I don’t prepare on Sunday, I always find an excuse during the week, so I end up eating not as healthy as I would like to for lunch. So, I had an internal debate and decided to get off my bum and make something!
This week I decided on my black bean and corn salad. It is incredibly easy to make and I usually have all the ingredients on hand, so it rarely requires a trip to the store. Score!
The best part about this recipe is that it is great to eat by itself, with gf chips, or on lettuce wraps! You can switch it up almost every day of the week!
