Today I am going to share one of my favorite recipes and it involves one of my biggest loves – the crock-pot!

Rewind to a couple of years ago to when Sam and I were registering for our wedding. We registered for a crock-pot because well, it’s just something you do, right? Well we got one! And it just sat in our cupboards collecting dust for a few months until I started to feel guilty for not using it. My solution was to immediately find a recipe to make so that I could at least say I used it once. Well, I was blindsided with love. Seriously.

Fast-forward  to the present – since my first spin with our crock-pot, we have  gotten a lot of use out of it and in the meantime, perfected our favorite recipe – Chicken Taco Chili! Side note: Family, if you are reading this, a Christmas idea: a larger crock-pot :)

I love this recipe because depending on what beans I have on hand or how many cans of corn I have, I can easily adapt the recipe to my mood. The recipe I am sharing with you today though is my favorite variation.

Most of the time I make a batch of this on Sunday, and Sam and I eat it for the next several days. You can eat it plain, top it over some rice or make lettuce wraps like I did this time! Then you can top it with whatever you desire as well! Some of my favorites are cheese, salsa and avocado! The ways to modify this recipe is endless!

{Gluten Free} Crock Pot Chicken Taco Chili


  • 1 16-oz can black beans
  • 1 16-oz can light red kidney beans
  • 1 16-oz can white beans
  • 1 16-oz can whole kernal corn
  • 2 10-oz can diced tomatoes with green chiles
  • 1 8-oz can tomato sauce
  • 1 packet taco seasoning
  • 3-4 boneless skinless chicken breasts (can use frozen)
  • Toppings of your choosing
  • Romain lettuce if you choose to make wraps


  1. Combine all ingredients except chicken in the crock-pot.
  2. Add chicken on top of the other ingredients.
  3. Cook on low for about 10 hours.
  4. Once chicken is cooked, take each piece of chicken out and shred it using two forks.
  5. Return the chicken to the crock-pot and stir in with the other ingredients.
  6. If you are making lettuce wraps, simply fill your cleaned lettuce 'bowl' with the mixture.
  7. Finish with toppings of your choosing.
